Great Grandma Collette’s Applesauce Spice Cake with Caramel Frosting
Applesauce Spice Cake Ingredients:
2 ½ cups flour
2 cups sugar
1 ½ teaspoons salt
1 ½ teaspoons soda
¼ teaspoon baking powder
¾ teaspoon cinnamon
½ teaspoon cloves
2 ½ teaspoons allspice
1 ½ cups applesauce
½ cup shortening
½ cup water
2 eggs
1 cup raisins
Applesauce Spice Cake Instructions:
Mix all dry ingredients. Add applesauce, shortening, and water; beat for two minutes. Add eggs and beat for two additional minutes. Mix in raisins. Bake at 350 degrees for 55-60 minutes.
Caramel Frosting Ingredients:
½ cup butter
1 cup brown sugar
¼ cup milk
2 cups powdered sugar
Caramel Frosting Instructions:
Melt ½ cup butter, add 1 cup brown sugar. Stir continuously for two minutes. Add ¼ cup milk and bring to a boil. Remove from heat and cool. Add two cups of powdered sugar gradually. Frost cake.
Grandma Marjean’s Sour Cream Apple Pie with Spicy Topping
Sour Cream Apple Pie Ingredients:
2 tablespoons flour
⅛ teaspoon salt
¾ cups sugar
1 egg, unbeaten
1 cup dairy sour cream
1 teaspoon vanilla
¼ teaspoon nutmeg
2 cups diced apples
9-inch pie shell pastry
Sour Cream Apple Pie Instructions:
Sift together flour, salt and sugar; add egg, cream, vanilla and nutmeg. Beat to smooth, thin batter. Stir in apples. Pour into pastry-lined pie pan. Bake in hot oven (400 degrees) for 15 minutes, then in moderate oven (350 degrees) for 30 minutes. Remove from oven.
Spicy Topping Ingredients:
⅓ cup sugar
⅓ cup flour
1 teaspoon cinnamon
¼ cup butter or margarine
Spicy Topping Instructions:
Mix well ⅓ cup sugar, ⅓ cup flour, 1 teaspoon cinnamon and ¼ cup butter or margarine. Sprinkle over pie. Return to hot oven (400 degrees) for 10 minutes to brown.
Gladys’s Pumpkin Bars with Cream Cheese Frosting
Pumpkin Bars Ingredients:
2 cups sugar
2 cups canned pumpkin
4 eggs
1 cup salad oil
2 cups flour
1 teaspoon soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon vanilla
Pumpkin Bars Instructions:
Mix ingredients in order given. Grease and flour 11-inch by 16-inch (cookie sheet). Bake for 30-35 minutes at 350 degrees. When cooled completely, frost with cream cheese frosting.
Cream Cheese Frosting Ingredients:
3 ounces cream cheese
1 stick oleo margarine
1 teaspoon milk
1 teaspoon vanilla
2 cups powdered sugar
Cream Cheese Frosting Instructions:
Mix all ingredients together until smooth, and frost cooled bars.
