Traditional Mexican food is always the way to go in Nebraska, and one of the most authentic places to enjoy is Copal. While staying true to tradition, the restaurant adds a vibrant and modern twist. 

When you walk in the atmosphere it is very energetic, filling the space around you with joy. The walls and decorations are vibrant and colorful but the soft lighting brings a cozy and warm atmosphere. 

Another perk is that the seating is spaced out allowing you to enjoy your time while still having an idea of what goes on around you.

The menu at Copal features simple dishes taken to the next level with flavor. Guests can easily find the perfect meal. 

The Birria tacos are filled with tender pork and beautifully cooked vegetables. The birria broth is rich in flavor with a subtle kick of spice to it. 

Horchatas are a traditional Mexican cinnamon rice milk drink that makes Copal standout. The presentation of each dish is completely unique and carefully crafted.

The service that Copal brings is top of the line and is very consistent. The servers are very friendly and always quick with the service.

Prices at Copal are reasonable with most entrees ranging between $15 to $20 and a little bit less for their lunch menu which is around $10 to $15. Copal is located in Eagle Run Square, which offers many other places to visit.
